One Healthy, Quick Dish

This is a healthy version of an "everything but the kitchen sink' dish. So feel free to switch out any of the veggies for ones you currently have on hand. This dish would also be great with rice instead of quinoa.

  • 2 cups quinoa (I used organic red quinoa)
  • 1 zucchini, sliced thin
  • 1 package firm tofu
  • 3 carrots, peeled and chopped
  • Soy sauce
  • 1 tablespoons sesame oil
  • 5 green onions chopped into 1 inch pieces
Cook quinoa according to package directions.

In a large wok, heat sesame oil over medium heat. Add zucchini and carrots, cook about 4 minutes, stirring occasionally. Add tofu and a couple glugs of soy sauce. Cook until warmed through- about 5 minutes. Add green onions. Cook for 1 minute and remove wok from heat. Add to quinoa. And enjoy! This dish is also awesome served cold... hot for dinner, cold for lunch. Yum!
