Super Quick Coffee Cake
I made this coffee cake for breakfast on my husband's birthday. It's incredibly easy and quick- something I was aiming for so that I wouldn't wake him... I wanted the scent of the coffee cake to do that :)
- 1.5 cups of sifted all- purpose flour
- 2 teaspoons of double- acting baking powder
- 1/2 teaspoon of salt
- 1 teaspoon of cinnamon
- 1/2 cup of sugar
- 1 egg, well beaten
- 1/2 cup of milk
- 3 tablespoons of melted butter
- Butter, cinnamon and sugar for topping
Sift flour and measure 1.5 cups. Add the flour to the baking powder, salt, cinnamon and sugar, and sift again. Combine the beaten egg, milk. and melted butter, and stir into the dry ingredients. Beat until smooth and thoroughly mixed. Pour the batter into a buttered, 8- inch square pan, dot the top liberally with butter and sprinkle with cinnamon and sugar. Bake at 400 degrees for 25 minutes or until brown, puffy, and done through. Enjoy!
