Homemade Blueberry Muffins

I tried out this recipe the day my sister left. She and my husband were both still asleep and I wanted to wake them up with the aroma of fresh baked goods. And since I had a bunch of fresh blueberries in the fridge, I figured this was the perfect recipe to make. Try it this weekend for your loved ones.



Ingredients:
  • 2 cups of sifted all purpose flour
  • 3 teaspoons of double acting baking powder
  • 3 tablespoons of sugar
  • 1/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 3/4 cup of milk
  • 1 egg, well beaten
  • 1/2 cup of melted butter
  • 1 cup of blueberries


Sift the flour and measure 2 cups (Flour increases in bulk with sifting. About 1 3/4 cups of flour will measure 2 cups after sifting).

Combine the sifted powder with the baking powder, sugar, salt, and cinnamon.

Sift again

Combine the milk and beaten egg...

Mix with dry ingredients. Add the melted butter and blend thoroughly.

Fold in the blueberries.

Butter muffin tins and fill each one 2/3 full with batter.

Bake at 400 degrees for about 25 minutes or until brown and puffy and done through.

Once out of the oven, break, slather on some butter, sprinkle on cinnamon, and enjoy!
