Instant Chocolate Cake
The other day I was CRAVING chocolate. I needed it. Life was standing still. I was crampy, sad, and hungry, and there was really only one cure.
And of course- we were out. No chocolate bars. No chocolate chips, cookies, or even chocolate cereal. The only thing I really wanted and needed in that moment was absent. But then I remembered a recipe I'd seen in the April issue of Food Network Magazine for instant chocolate cake... and all you needed was cocoa powder! I thrashed through the ripped out pages wobbly stacked on the bakers rack until I found it. And then just like that- I was back in business!
Recipe:
Whisk 1/4 cup flour, 5 tablespoons sugar, 2 tablespoons cocoa powder, 1 egg, 3 tablespoons milk (I used heavy cream since I was out), 3 tablespoons vegetable oil, and a dash each of vanilla extract and salt in a large mug until smooth. Microwave until puffed, about 2 minutes. Sprinkle with more cocoa powder. I had some raspberries in the fridge so I threw a few of those on top too.
Seriously- a 2 minute chocolate cake- Amazing.
