To the Weekend!



You wanna know something really awesome? As I'm writing this... it's snowing. 2 days into fall we got our first snow- definitely makes everything feel cozy. Highs in the 40's, steaming hot coffee, and yellow & orange trees with just a light dusting of snow... I love it!

To the Weekend!



It's beginning to feel a lot like fall over here. The mornings and evenings are cold. The air is crisp. And leaves are falling all about... it is my absolute favorite time of year. This weekend will be spent with more wonderful family... feeling very blessed.

Double Chocolate Cookie Bars


I love chocolate and I love Oreos. So when you mix them together- I'm one happy girl. I made these Double Chocolate Cookie Bars for our church potluck dinner yesterday and they were exactly as I'd hoped... 2000% chocolaty :) And- they were also incredibly easy to make... my kind of recipe :)

I found the recipe through Heidi Bakes and modified it slightly. Here's what you'll need:

Double Chocolate Cookie Bars

Ingredients:

28 Chocolate Sandwich Cookies
1/4 cup unsalted butter
1 (14oz) can sweetened, condensed milk
1 teaspoon vanilla extract
2 cups semisweet chocolate chips

Preheat oven to 325 degrees.

Set aside 6 cookies and grind the rest in a food processor (or smash in a plastic bag with a rolling pin). In a small bowl, combine the cookie crumbs and butter until well mixed. Press into the bottom of a 9x13 inch pan.

Over a double broiler, mix the 1 cup of the chocolate chips with the vanilla and condensed milk (I don't have a double broiler so I just set a large bowl over a pot of boiling water and it seems to work just fine). Stir frequently until smooth. Spread evenly over the crumb crust. Sprinkle remaining chocolate chips over the top and then crumble the remaining cookies over top as well.

Bake 20- 25 minutes (20 minutes for me) and cool completely before cutting into bars. Then enjoy!

To the Weekend!


September may very well be the fastest moving month this year for me! My dad just left and I'll have my stepdad out this coming week. So grateful they both have made the effort to come see us and hang out. I also just started a biblical counseling course which is so interesting! And then between work, daily life, baby showers, bridal showers, church activities, birthday parties, homework, cooking, & cleaning... I'm realizing just how vital it is to be wise with my time management. But even with everything going on, I am so very thankful for all of it- because having the homework and classes means I have the opportunity to grow and gain wisdom. The showers, parties, and church activities point to the wonderful group of friends I have all around me. The launch of SP Kids has created a new energy and excitement with each new day in the office. And the cooking and cleaning means I have someone to cook and clean for, someone to serve out of complete love- who just so happens to be one amazingly awesome guy.
